I used dried currants instead of raisins because that’s what I had. And for the coconut, I used the organic dried, unsweetened. I didn’t really measure the coconut or pineapple (I had the bigger can), I just kinda estimated. I used the 9 x 13 pan. It was wonderful!! I’ll definitely make it again (and again and again and……)
