Leftover Vegetables = Vegetable Soup

Vegetables in Plastic Bag Most of the time we have veggies leftover from dinner. Not really enough to save for another serving, but I feel bad just throwing it away.  I dislike wasting food/money, especially in this economy.

So now, no matter how small of an amount is leftover, I just toss them into a freezer bag. After several weeks there’s a nice combination of vegetables in the bag to make soup.

Just place the frozen veggies in a large pot, cover with broth and on medium high heat bring to a boil.  Add some noodles, fresh herbs, spices, and before you know it there’s another meal!
