Crab Stack with Mango and Avocado

I have been wanting crab for a few days and I finally satisfied my craving with this delicious and refreshing dish. It only takes about 20 minutes to prepare, with no actual cooking going on. As with most of my recipes (except baking) you can switch or omit ingredients, and make it exactly to your liking!

I didn’t have the proper items to make the stacks, so I cut the bottoms out of plastic containers. You could also use whatever size food can you’d like, just take the top and bottom off.

First layer spinach

I sprayed the plastic container with a little olive oil. Place on the serving plate. First layer spinach, or arugula that I mixed with a little olive oil and salt.

Next some sliced tomatoes, salt and pepper

A layer of corn

A layer of corn (I used fresh cut from the cob).

Cucumber layer

Cucumber layer, peeled, sliced thin and salted.

Red onion layer

Red onion layer, thinly sliced (I used the mandoline).

Mango layer

Mango layer, sliced thin. Papaya would work, too!

Avocado layer

Avocado layer.

Press down on the completed stack to compress while still in plastic holder. Before removing plastic holder, I removed the excess water on the plate with a paper towel. Carefully lift the plastic off.
