They were really good and the olive oil taste imparted a richness. However, if I were planning ahead to make these cakes, I would use regular olive oil. Another good substitute for the butter is coconut oil or coconut butter. Don’t get me wrong… I love butter and use it all the time!

You don’t say what level of olive oil you used. Is it Extra Virgin, Virgin, etc.? I only have extra virgin in the house right now and I am thinking it might be to strong of a flavor. Thanks for sharing!!
