Black Walnut Cookies

I love the distinct flavor of the black walnut. Plus, it always reminds me of my Dad because I know it’s one of his favorites!

These cookies spread out and flatten when you bake them. They would be perfect to make cookie ice cream sandwiches out of. I just know they would be fabulous with some Black Walnut Ice Cream in the center. I’m gonna put that on my shopping list for tomorrow so we can give that a try before the cookies are all gone!

If you haven’t tried black walnuts please go to the market and buy a bag to make these cookies. You’ll be happy you did!!

INGREDIENTS
1/2 cup unsalted butter, softened
1/2 cup white sugar
1/2 cup brown sugar, packed
2 eggs
3/4 cup all-purpose flour
3/4 cup wheat flour
1/4 tsp baking soda
1/2 tsp salt
3/4 cup black walnuts, chopped

METHOD
Preheat oven to 350 degrees.
Cream together the butter and sugars in a medium bowl.
Add the eggs and beat until smooth.
Add the dry ingredients and stir into mixture until incorporated.
Add the walnuts.
Drop by rounded teaspoons onto baking sheet (I always use a silpat for cookies).
Leave about 2 inches of space between cookies.
Bake for about 8 to 10 minutes.
Remove tray from oven and let cookies set on tray for a minute before removing to cooling rack.
Try one while it’s warm and you’ll be addicted!!

    Just made these this evening; excellent recipeā€¦ and aroma while baking!

    Had to smile, as I also have a connection between black walnuts and my father. He would brave the mess to clean and get to these things. (Tree in the backyard.)
