Cod is an inexpensive fish that is typically easy to find fresh in the market. It cooks up quickly and this is a meal that you can have on the table in no time… especially if you have the pesto sauce made already.
For the Pesto ~ if you don’t have pine nuts, no problem! I have successfully made delicious pesto sauce using almonds, walnuts, macadamia nuts, or even sunflower seeds.
This recipe serves 2.
INGREDIENTS
For Pesto Sauce:
2 bunches of fresh Basil (about 1 cup)
1/3 cup Parmesan Cheese
1/3 cup Pine Nuts
5 cloves of garlic
Salt and pepper, to taste
1/2 cup Olive Oil, or more until desired consistency is reached
For Fish:
2 large pieces of Cod
1 Tbsp Olive Oil
a dash of Italian Seasoning
Salt and Pepper, to taste
Spaghetti, cooked according to package directions
METHOD
For Pesto Sauce:
Add the basil, Parmesan cheese, pine nuts, garlic, salt and pepper into the food processor.
Pulse a few times.
Add in some olive oil and pulse some more.
Continue to add in olive oil until you get a nice thick consistency.
Taste and add more salt and pepper, if desired.
Set aside.
Now is a good time to get your pasta cooking!
For the Fish:
Place olive oil in a large saute pan on medium heat.
When pan is hot add the cod (bottom side down).
Season top with a little salt, pepper, and a dash of Italian Seasoning.
After a few minutes, turn fish over and continue to cook for about 3 to 4 minutes, or until cooked through.
To plate: Put a serving of pasta on the plate and top it with some pesto. Center one piece of fish on the pasta and place a spoonful of pesto on the fish. Enjoy right away!
