Stuffed Potato Skins

I’m a starch girl… by that I mean I love bread, pasta, potatoes, rice, etc.  When I got a craving for some potato skins I baked 4 large Russet potatoes in the oven, then scraped out the inside of the potato and saved it to make some mashed potatoes.

Below is my recipe for Stuffed Potato Skins. They’re super simple and super delicious! You can make variations by using different types of cheese, adding jalapenos, capers, olives, sausage, chopped tomatoes, grilled onions, etc.

INGREDIENTS
4 Russet Potatoes, baked
2 cups of cheese, I used Cheddar & Jack
8 pieces of Bacon, cooked and crumbled or cut into pieces
a little Salt & Pepper, to taste

METHOD
To bake the potatoes: After washing and drying the potatoes, I rub each one with olive oil and put into a 350 degree oven for about 40 minutes (or until fork inserted come out easily).
Split each potato in half and scoop out the inside, leaving a small amount of potato on the skin.
Sprinkle the cheese evenly on each potato half.
Top with bacon.
Sprinkle a little salt and pepper.
Put into the oven and bake until the cheese is melted, hot and bubbly.
Serve with sour cream or Greek yogurt.
