All week long it’s fruit and bran muffins for breakfast ~ so when the weekend rolls around, I tend to make nice hearty breakfasts. It’s a Sunday morning and we’re having scrambled Eggs, Bacon and homemade Whole Wheat Biscuits. I like my biscuits with butter and jam… but my husband is from the South and he loves Biscuits & Gravy. This recipe is whipped up quickly using the bacon drippings. I wouldn’t advise having something like this too often, but every once in a while it sure is good!
INGREDIENTS
1/4 cup Bacon drippings
2 Tbsp All Purpose Flour
1 to 1 1/2 cup Milk
Fresh Ground Pepper, to taste
Pinch of Salt
Sprinkle of Parsley
METHOD
Using the pan that you cook your bacon in, heat up the bacon drippings on low.
To that whisk in the flour, being sure to get rid of any lumps.
Slowly pour in the milk, whisking the entire time.
Once thickened, remove from heat.
Season with pepper, salt and parsley.
Taste and adjust seasonings, if needed.
