Chewy Chocolate Cookies with Peanut Butter Chips

Dipping a Chocolate Cookie into milk

Nothing better than a warm cookie dipped in cold milk! Yummy 😉

My usual favorite cookie is a homemade chocolate chip… but this cookie is running a close 2nd. I added peanut butter chips to this recipe, but they would be delicious with chocolate chips instead, or no chips at all!

This recipe makes about 50 cookies.

INGREDIENTS
2 1/2 sticks Butter, softened
2 cups Sugar
2 Eggs
2 tsp Vanilla Extract
2 cups Flour
3/4 cup Cocoa Powder
1 tsp Baking Soda
1/2 tsp Salt
1 – 10 oz. package of Peanut Butter Chips

METHOD
Preheat the oven to 350 degrees.
In a large bowl beat together butter and sugar until light and fluffy.
Add in the eggs and vanilla, continue to beat.
Turn off mixer and add flour, cocoa powder, baking soda and salt.
Turn mixer back on (slowly so flour dust doesn’t get everywhere) and beat until incorporated.
Add the peanut butter chips and turn mixer on for just a second or two, to mix in the chips.
Drop by teaspoonfuls onto an ungreased cookie sheet, or Silpat.
The cookies don’t really spread out, so you can easily place a dozen on one half sheet.
Bake for about 8 minutes, but do not overbake the cookies!
They will be soft when you take them out of the oven, but they will firm up a little as they cool.

    The recipe didn’t say when to add the vanilla, so I completely forgot to add it lol! but they were still delicious even without it! Will definitely be making these again! (with vanilla next time 😛 )
