Mexican Seafood Cocktail

This is so delicious, full of my favorite things! If you’re a seafood lover, then you will love this refreshing & healthy seafood cocktail. When I lived in Los Angeles you could order these in most Mexican restaurants, even the smallest of the Mexican restaurants served a seafood cocktail. You could request exactly what seafood you wanted in it (and more importantly, what you didn’t want in it).

The following recipe is just a basic guideline. You don’t have to add in the oysters or clams… or you could add some scallops or mussels. Just depends on what you like!

This recipe serves 4.

INGREDIENTS
2 cups Clamato Juice (or use 1 1/2 cups Tomato Juice with 1/2 cup Clam Juice)
1/3 cup Ketchup
1/3 cup fresh lime juice
1 tsp Tabasco, or more if you like it spicy!
1 tsp Kosher Salt, to taste
2 cloves of garlic, finely chopped
1/4 cup chopped fresh Cilantro
1/2 cup White Onion, or Scallions, finely chopped
1/2 lb cooked small Shrimp, cleaned, with shell and tail off
1/2 lb lump Crab Meat, picked and cleaned (I used King Crab)
8 raw oysters
8 cooked clams (shells removed)
1 Avocado, cut into small chunks

METHOD
Chill 4 serving glasses/dishes.
Combine all the ingredients into a large bowl, except the seafood and the avocado.
Mix together well.
Add in the seafood and avocado and gently combine.
Divide equally among the 4 chilled dishes.
Garnish with a lime wedge.
I like it served with saltines or tortilla chips.
