<p>Cod is an inexpensive fish that is typically easy to find fresh in the market. It cooks up quickly and this is a meal that you can have on the table in no time&#8230; especially if you have the pesto sauce made already.<span id="more-3991"></span></p>
<p>For the Pesto ~ if you don&#8217;t have pine nuts, no problem! I have successfully made delicious pesto sauce using almonds, walnuts, macadamia nuts, or even sunflower seeds.</p>
<p><em>This recipe serves 2.</em></p>
<p><strong>INGREDIENTS</strong><br />
<span style="text-decoration: underline;">For Pesto Sauce:</span><br />
2 bunches of fresh Basil (about 1 cup)<br />
1/3 cup Parmesan Cheese<br />
1/3 cup Pine Nuts<br />
5 cloves of garlic<br />
Salt and pepper, to taste<br />
1/2 cup Olive Oil, or more until desired consistency is reached</p>
<p><span style="text-decoration: underline;">For Fish:</span><br />
2 large pieces of Cod<br />
1 Tbsp Olive Oil<br />
a dash of Italian Seasoning<br />
Salt and Pepper, to taste<br />
Spaghetti, cooked according to package directions</p>
<p><strong>METHOD</strong><br />
<span style="text-decoration: underline;">For Pesto Sauce:</span><br />
Add the basil, Parmesan cheese, pine nuts, garlic, salt and pepper into the food processor.<br />
Pulse a few times.<br />
Add in some olive oil and pulse some more.<br />
Continue to add in olive oil until you get a nice thick consistency.<br />
Taste and add more salt and pepper, if desired.<br />
Set aside.<br />
Now is a good time to get your pasta cooking!</p>
<p><span style="text-decoration: underline;">For the Fish:</span><br />
Place olive oil in a large saute pan on medium heat.<br />
When pan is hot add the cod (bottom side down).<br />
Season top with a little salt, pepper, and a dash of Italian Seasoning.<br />
After a few minutes, turn fish over and continue to cook for about 3 to 4 minutes, or until cooked through.</p>
<p><span style="text-decoration: underline;">To plate:</span> Put a serving of pasta on the plate and top it with some pesto. Center one piece of fish on the pasta and place a spoonful of pesto on the fish. Enjoy right away!</p>
