<li class="ingredient">1/2 cup Mayonnaise (I use the type made with Olive Oil)</li>
<li class="ingredient">1 teaspoon Cumin</li>
<li class="ingredient">dash of salt</li>
<li class="ingredient">1/3 cup finely grated Parmesan Cheese</li>

<li class="instruction">Cook corn by boiling for about 6 minutes.</li>
<li class="instruction">Meanwhile, mix the mayonnaise, cumin, and salt together in a small bowl.</li>
<li class="instruction">When corn is done, remove from water and pat dry.</li>
<li class="instruction">Using a brush, thoroughly cover the corn with the mayonnaise mixture.</li>
<li class="instruction">Sprinkle the corn all around with Parmesan cheese.</li>

1 1/2 cups of flour<br />
1/2 tsp salt<br />
1 Tbsp baking powder<br />
1 1/3 cup milk<br />
1 egg, beaten<br />
2 cups of fresh corn or 1 can of corn, drained (as an option you can use the Mexican canned corn)<br />
1/4 cup chopped scallions</p>
<p>METHOD<br />
Combine all ingredients.</p>
<p>Fry in hot oil in a skillet until light brown in color (about 2 to 3 minutes per side). Remove from pan and place on a paper towel to remove any excess oil. Lightly salt while still warm and put on serving plate.</p>
<p>Options for Savory:<br />
You can really make these your own by adding other ingredients such as diced jalapenos, pimentos, diced ham, crab or shrimp meat, cooked crumbled bacon pieces, Parmesan cheese, shredded cheddar cheese, grated zucchini, etc.</p>
<p>Option for Sweet:<br />
Definitely add 1 Tbsp of sugar into the batter before frying. You could also add some cooked crumbled bacon pieces into the batter, as well. Great served with powdered sugar on top, maple syrup for dipping, apple sauce, etc.</p>
