So, the other day when we had no bread in the house I made a quick Focaccia. It’s easy because you don’t have to let the bread rise, so you save all that rising time.

You can make the bread dough yourself, or I always keep the frozen bread loaves on hand that you can find in the freezer section. They usually come 3 or 5 to a package. If you’re not familiar with them, check it out next time you’re at the grocery store. They’re really great to make Focaccia and I also use them to make Italian Fried Bread Dough (but that’s gonna be another post).

Here’s my recipe for a tasty Focaccia, whether you make the dough yourself or use the frozen bread dough. None of these ingredients really need to be measured. You like lots of onion, use more… want less garlic, use less… love olives, add some! You get the idea.

INGREDIENTS
Bread Dough
Olive Oil
1 Red Onion, sliced thin
10 cloves of garlic, minced
4 Tbsp Capers, drained
1/4 cup Parmesan Cheese
1 Tbsp Italian Seasoning
Salt and Pepper, to taste

METHOD
Preheat the oven to 350 degrees.
In a large frying pan saute the onions with a little olive oil until they are soft.
Set aside.
Grease a baking sheet with olive oil.
Form the bread dough onto the baking sheet.
I just use my hands to form it, just like when making pizza.
Some people use a rolling pin, but that just doesn’t work for me.
Once you have the bread dough flattened out on the baking sheet, put a little olive oil on top.
Even distribute the onions, garlic, cheese, capers, and seasonings on top of the bread dough.
Bake in the oven until lightly golden, about 20 minutes.
Enjoy!
