<p>My usual favorite cookie is a homemade chocolate chip&#8230; but this cookie is running a close 2nd. I added peanut butter chips to this recipe, but they would be delicious with chocolate chips instead, or no chips at all!<span id="more-3874"></span></p>
<p><em>This recipe makes about 50 cookies.</em></p>
<p><strong>INGREDIENTS</strong><br />
2 1/2 sticks Butter, softened<br />
2 cups Sugar<br />
2 Eggs<br />
2 tsp Vanilla Extract<br />
2 cups Flour<br />
3/4 cup Cocoa Powder<br />
1 tsp Baking Soda<br />
1/2 tsp Salt<br />
1 &#8211; 10 oz. package of Peanut Butter Chips</p>
<p><strong>METHOD</strong><br />
Preheat the oven to 350 degrees.<br />
In a large bowl beat together butter and sugar until light and fluffy.<br />
Add in the eggs and vanilla, continue to beat.<br />
Turn off mixer and add flour, cocoa powder, baking soda and salt.<br />
Turn mixer back on (slowly so flour dust doesn&#8217;t get everywhere) and beat until incorporated.<br />
Add the peanut butter chips and turn mixer on for just a second or two, to mix in the chips.<br />
Drop by teaspoonfuls onto an ungreased cookie sheet, or Silpat.<br />
The cookies don&#8217;t really spread out, so you can easily place a dozen on one half sheet.<br />
Bake for about 8 minutes, but do not overbake the cookies!<br />
They will be soft when you take them out of the oven, but they will firm up a little as they cool.<br />
