Corn Fritters (Sweet or Savory)

These are quick, easy and yummy! Please see below for optional touches you can add!!

corn frittersINGREDIENTS
1 1/2 cups of flour
1/2 tsp salt
1 Tbsp baking powder
1 1/3 cup milk
1 egg, beaten
2 cups of fresh corn or 1 can of corn, drained (as an option you can use the Mexican canned corn)
1/4 cup chopped scallions

METHOD
Combine all ingredients.

Fry in hot oil in a skillet until light brown in color (about 2 to 3 minutes per side). Remove from pan and place on a paper towel to remove any excess oil. Lightly salt while still warm and put on serving plate.

Options for Savory:
You can really make these your own by adding other ingredients such as diced jalapenos, pimentos, diced ham, crab or shrimp meat, cooked crumbled bacon pieces, Parmesan cheese, shredded cheddar cheese, grated zucchini, etc.

Option for Sweet:
Definitely add 1 Tbsp of sugar into the batter before frying. You could also add some cooked crumbled bacon pieces into the batter, as well. Great served with powdered sugar on top, maple syrup for dipping, apple sauce, etc.

    Made these this afternoon…taking them to a gathering this evening. Had to make a couple of substitutions…chopped onion instead of scallions, used almond milk and coconut oil. They are delicious. (Gotta use what you have when you do something on the spur of the moment!) THANKS for this recipe!

    • So glad you like them! Substitutions are great!! I’m going to a gathering this evening, as well… hmmm. Could we end up at the same place? haha
