I love to start my day with a small stack of whole wheat pancakes. There’s something about the flavor of pancakes drizzled with pure maple syrup, served with an over-easy egg. One of my favorite food combinations. Yummy!
With this simple recipe you will have enough pancakes for 2 people. Need more? This recipe is easily doubled.
INGREDIENTS
1 cup Whole Wheat Flour
2 Tbsp Sugar
1 tsp Baking Powder
1/2 tsp Salt
2 Tbsp Butter, melted
1 large Egg
3/4 cup Milk (I used Almond Milk last time I made these and they turned out wonderful!)
METHOD
Combine the dry ingredients in a small bowl.
Whisk in the butter, egg and milk.
Drop by spoonfuls (or whatever size you want your pancakes) onto a medium hot greased griddle or pan.
Flip pancake when the edges begin to bubble.
Best served with Maple Syrup (molasses, honey or jam are tasty options).

Now, I could probably eat this entire stack myself…I rarely eat pancakes b/c I totally LOVE them and can OD on ’em!! I’ll bet I could add more milk and make ’em into thin crepes!! Yummmmm!! xoxo Ally
